European norm 1 182. Commercial kitchens that produce wastewater must have pre-treatment plants to ensure that the public sewer network does not discharge grease, oil and grease (FOG). Otherwise, highly lubricating sewage pipe systems and drainage equipment are at risk. Grease and oils are deposited with other wastewater components on the walls of the pipes and can lead to corrosion, blockages and noxious smells. Therefore, grease separators, known as grease traps or grease interceptors, will have to be installed to maintain the grease wastewater. This applies to commercial kitchens in Airports, Hospitals, Restaurants, Hotels, shopping malls and Commercial buildings.
